In 2017, Edgar and his girlfriend, with a passion and love for nature, started this project. The goal is to produce a specialty coffee and also make a contribution to Moyuta’s development, creating jobs all year round for families living in poverty working in coffee and other crops. We are environment friendly and we take care of our flora and fauna not utilizing herbicides.

Honey processing, however, is somewhere in the middle. You remove the cherry peel but leave some flesh inside. The “mucilage”, remains while the beans are dried.
The cherries are first dried to the point where the fruit is mechanically removed with a dry mill, then the cherries are spread over concrete patios.
La Azucena is a coffee farm located in Moyuta, Jutiapa.
Moyuta is in the southeast area of Guatemala, and one of its singularities is that it has beaches but also mountains which means it has a mild weather. The farm´s altitude is between 1,300 and 1,400 meters above sea level in the highest area of Moyuta.
